Riia’s Vegan Banana Nut Muffins
*Altered from this recipe
Ingredients: 3 Ripe Bananas (mashed) 3 tbsp Olive Oil 2 cups flour (aim for healthier flours…no white flours!) 3/4 cup Sugar (or applesauce as a substitute) 1 tsp Baking Soda 1 tsp Vanilla Extract 3 tsp Cinnamon (or desired amount) 1/2 cup Walnuts (optional)
How to: Preheat oven to 350. Mix mashed bananas with olive oil. Add in flour, sugar, baking soda,vanilla extract and cinnamon. Blend using an electric mixer until smooth texture. Stir in walnuts. Pour batter into desired pan. I chose a cupcake tray because it makes portion control easier!  Cook for about 30-60 minutes, depending on pan size! Enjoy :)

Im Bacccckkkkkk!!!! (Once Again)

I’ve been gone for awhile, a little more than a while trying to find myself and what not. I have made a few changes on the way and neglected some goals in the process. But, I am back to start over again and to do it right. I’d like to see a change and I know I can do it if I push myself hard enough and have a little more faith. So once again, Im BACK and this time Im going to do it right!!!
